Here's a basic recipe for making chicken satay:
Ingredients:
For the Chicken Satay:
- 1.5 to 2 pounds (about 700 to 900 grams) boneless, skinless chicken thighs or breasts, cut into thin strips
- Wooden skewers, soaked in water for at least 30 minutes
For the Marinade:
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons vegetable oil
- 2 tablespoons brown sugar
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 2 cloves garlic, minced
- 1 tablespoon lemongrass, minced (optional)
- Salt and pepper to taste
For the Peanut Sauce:
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon red curry paste (optional for a spicy kick)
- Water (as needed to adjust consistency)
Instructions:
Prepare the Marinade:
- In a bowl, whisk together all the marinade ingredients until well combined.
Marinate the Chicken:
- Place the chicken strips in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well-coated.
- Allow the chicken to marinate for at least 2 hours, or preferably overnight in the refrigerator.
Skewer the Chicken:
- Preheat your grill or barbecue. Thread the marinated chicken strips onto the soaked wooden skewers.
Grill the Chicken Satay:
- Grill the chicken skewers over medium-high heat, turning occasionally, until the chicken is fully cooked and has a nice char on the outside. This typically takes about 8-10 minutes.
Prepare the Peanut Sauce:
- While the chicken is grilling, prepare the peanut sauce. In a saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and red curry paste.
- Heat over low heat, stirring continuously until the sauce is smooth and well combined. If needed, adjust the consistency with water.
Serve:
Serve the grilled chicken satay with the peanut sauce on the side for dipping. Garnish with chopped cilantro or crushed peanuts if desired.
