Takoyaki is a popular Japanese street food known for its crispy exterior and gooey interior filled with diced octopus. Here's a basic recipe to make Takoyaki at home:
Ingredients:
- 1/2 cups all-purpose flour
- 2 & half cups dashi stock (or substitute with water)
- 2 eggs
- 1/2 pound cooked octopus, diced into small pieces
- 1/4 cup chopped green onions
- 1/4 cup tenkasu (tempura scraps)
- 1/4 cup pickled ginger, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon mirin (sweet rice wine)
- 1 teaspoon salt
- Takoyaki sauce (or Worcestershire sauce)
- Japanese mayonnaise
- Aonori (dried green seaweed flakes)
- Katsuobushi (bonito flakes)
Equipment:
- Takoyaki pan
- Takoyaki pick or bamboo skewer
Instructions:
Prepare the Batter:
- In a large mixing bowl, whisk together the all-purpose flour, dashi stock, and eggs until smooth. The consistency should be similar to pancake batter.
Add Fillings:
- Stir in the diced octopus, chopped green onions, tenkasu, pickled ginger, soy sauce, mirin, and salt until well combined.
Heat the Takoyaki Pan:
- Heat the takoyaki pan over medium heat and brush each well with oil to prevent sticking.
Pour the Batter:
- Once the pan is hot, pour the batter into each well, filling them nearly to the top.
Cook and Flip:
- Allow the batter to cook for a few minutes until the edges start to set. Using a takoyaki pick or bamboo skewer, carefully lift the edges of each takoyaki and rotate them 90 degrees to form a round shape.
- Continue rotating the takoyaki as they cook, ensuring all sides are evenly browned and crispy.
Finish Cooking:
- Cook the takoyaki for a total of about 8-10 minutes, or until they are golden brown and cooked through.
Serve:
- Once the takoyaki are cooked, transfer them to a serving plate.
- Drizzle takoyaki sauce and Japanese mayonnaise over the top.
- Sprinkle with aonori (dried seaweed flakes) and katsuobushi (bonito flakes) for extra flavor.
Enjoy:
- Serve the takoyaki hot and enjoy them immediately.
Tips:
- Takoyaki can be filled with various ingredients such as shrimp, cheese, or vegetables, depending on your preference.
- Be careful when flipping the takoyaki to avoid burning yourself.
- Takoyaki is best enjoyed fresh, but any leftovers can be stored in an airtight container in the refrigerator and reheated in a toaster oven or microwave.
