Napolitana sauce

By Foodefare

Napolitana sauce, also known as Neapolitan sauce or Salsa Napolitana in Italian, is a classic tomato-based sauce that originates from Naples, Italy. This sauce is a simple and flavorful recipe often used as a base for pasta dishes and pizzas. The key ingredients typically include tomatoes, garlic, onions, olive oil, and herbs. Here's a basic recipe for Napolitana sauce:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes or whole peeled tomatoes, crushed by hand
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Optional: Red pepper flakes for heat
  • Fresh basil or parsley for garnish

Instructions:

  • In a saucepan, heat the olive oil over medium heat.
  • Add finely chopped onions and sauté until they are soft and translucent.
  • Add minced garlic and sauté for an additional minute until fragrant.
  • Pour in the crushed tomatoes, and if using whole tomatoes, crush them by hand or with a spoon as you add them to the pan.
  • Season the sauce with salt, pepper, dried oregano, dried basil, and red pepper flakes if you want a bit of heat.
  • Allow the sauce to simmer over low to medium heat for at least 20-30 minutes, stirring occasionally. This helps the flavors meld and the sauce to thicken.
  • Taste and adjust the seasoning as needed.
  • Garnish with fresh basil or parsley before serving.
