Napolitana sauce
By Foodefare
Napolitana sauce, also known as Neapolitan sauce or Salsa Napolitana in Italian, is a classic tomato-based sauce that originates from Naples, Italy. This sauce is a simple and flavorful recipe often used as a base for pasta dishes and pizzas. The key ingredients typically include tomatoes, garlic, onions, olive oil, and herbs. Here's a basic recipe for Napolitana sauce:
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes or whole peeled tomatoes, crushed by hand
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Optional: Red pepper flakes for heat
- Fresh basil or parsley for garnish
Instructions:
- In a saucepan, heat the olive oil over medium heat.
- Add finely chopped onions and sauté until they are soft and translucent.
- Add minced garlic and sauté for an additional minute until fragrant.
- Pour in the crushed tomatoes, and if using whole tomatoes, crush them by hand or with a spoon as you add them to the pan.
- Season the sauce with salt, pepper, dried oregano, dried basil, and red pepper flakes if you want a bit of heat.
- Allow the sauce to simmer over low to medium heat for at least 20-30 minutes, stirring occasionally. This helps the flavors meld and the sauce to thicken.
- Taste and adjust the seasoning as needed.
- Garnish with fresh basil or parsley before serving.
