Classic Greek salad

Greek salad is a versatile dish that can be served as a side dish or as a light and healthy main course. It's a popular choice for its vibrant colors, fresh ingredients, and the delicious combination of flavors. It is also known as Horiatiki salad and was originated in Greece. It typically consists of fresh, crisp vegetables, feta cheese, olives, and a dressing made with olive oil and herbs.
Ingredients:
- 4 medium-sized tomatoes, cut into chunks
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 green bell pepper, chopped
- 1 cup olives, pitted
- 200g (7 oz) feta cheese, crumbled
- 1 teaspoon dried oregano
- Salt and black pepper to taste
For the Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions:
- In a large salad bowl, combine the tomatoes, cucumber, red onion, green bell pepper, and Kalamata olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.
- Pour the dressing over the vegetables and toss the salad gently to coat the vegetables evenly.
- Sprinkle crumbled feta cheese over the top of the salad.
- Season the salad with dried oregano, and additional salt and pepper to taste.
- Serve immediately or refrigerate for a short time to allow the flavors to meld.
